Named after my friend who is gluten intolerant, this is a soft, homemade, almond flour upside-down cake. I put this recipe together to be gluten-free and it can be made in many flavors! For this version, we used blueberries and a black currant jam. I make this cake for us even though we are able to eat wheat. The chai-style spices deepen the fruit and jam flavors. This cake is usually gone within a day in my house!
