Gluten Free Carrot Pasta Bake Vegetarian: This is a modification of a recipe from the channel “Cooking with Lisa” and she has let me mess around with it a tiny bit to make it not only gluten free, but also low FODMAP as well. And Rick, yes I saved some for you.

New Gluten free ingredients:
2 ½ cups San Remo gluten free penne pasta
1 tsp salt
3 tbsp unsalted butter
1/2 leek (green part) finely chopped
200ml unsweetened almond milk (200ml evaporated milk)
1 1/2 cups cheddar cheese
50 grams grated parmesan cheese
2 Large carrots chopped
1 red bell pepper (or orange) chopped
Ground black pepper to taste

Original Ingredients:
2 ½ cups pasta
1 tsp salt
2 tbsp unsalted butter
½ onion
1 can evaporated milk
8 once yellow cheddar cheese
¼ cup grated mozzarella cheese
3 carrots
1 red bell pepper
Salt & pepper to taste
