7 ounces roasted red peppers, chopped
½ cup parmesan, grated
1/3 cup parsley, chopped
14 ounces canned artichokes, drained and chopped
Three tablespoons olive oil
¼ cup capers, drained
One and ½ tablespoons lemon juice
Two garlic cloves, minced
1. In your blender, combine the red peppers with the Parmesan
and the rest of the ingredients and pulse well. Divide into cups
and serve as a snack.
