This recipe is slightly adapted from the Greek-Style Pea Casserole recipe in Elena Paravantes’ book The Mediterranean Diet Cookbook for Beginners. The main difference in my version is that I add the peas later on in the cooking process, for brighter color and firmer texture. This stew turned out very tasty and makes a simple and satisfying vegetarian (or vegan if you skip the feta) entree.
