Mango Shrimp Ceviche
☼juice from 3-4 limes
☼1 lb deveined shrimp, cut into small cubes
☼1 bell pepper, diced
☼1 avocado, diced
☼2 champagne mangos, diced
☼1/2 cucumber, diced
☼1/4 red onion, diced
☼1 jalapeno, deseeded, diced
☼1 cup cilantro, finely chopped
☼1 teaspoon salt
Add the shrimp and juice together so the shrimp is fully covered and let it sit for 10 minutes or until the shrimp cooks. Combine all the other ingredients together with the shrimp and lime juice, let it sit for 2-3 hours, and then enjoy 🙂
Cheesy Roasted Broccolini
☼1 bunch Broccolini
☼ 2 tablespoons extra virgin olive oil
☼ 2 tablespoons tahini
☼1/4 cup nutritional yeast
Toss everything together and roast at 425 F for 15-20 minutes or until golden brown and crispy
