If you like Salt and Vinegar potato chips you’ll love these crispy little okra poppers! I invented this recipe accidentally. I love pickled okra and I’d made a big batch, which I’d been eating for a couple of weeks. I was craving something crispier one day, and I thought, “what if I cut these pickles in half and air fried them?” I tried it and I was amazed at how much my air fried okra pickles tasted like salt and vinegar potato chips! I simplified the recipe by eliminating the full pickle brine and marinating the okra already cut (to speed up the quick pickling process). The result is these crispy and delicious salt and vinegar okra poppers!
To make this recipe all you need is okra, vinegar, salt, and an air fryer. First, you’ll wash your okra and cut each one in half. Next, you’ll place your okra in a food safe container, and cover them with vinegar. Add in salt to taste, and let your okra rest in the fridge for at least 3 days. The longer you allow your okra to rest the stronger the salt and vinegar flavor will be! When you’re ready to eat, just take as many of the okra as you want, and put them green side up in your air fryer- fry at 400 degrees for 10-15 minutes (check at the 10 minute mark). That’s all there is to it!
