As Plant Based Vegans, we love our salads to be nutritious, balanced and high in protein and of course delicious. Both of these vegan salads are ready in under 20 minutes, they are very easy to make in this simple to follow vegan salad recipe video, and both plant based salads I have made for around a decade, they have been tried and tested on many guests. If i could only eat 2 salads for the rest of my life it would be these two yummy vegan salads.
Both Vegan Salad recipes are full of nutrition advice, tips and health benefits to eating a rainbow of vegetables and fruits in these salads. Both Salads follow the Mediterranean diet of fresh local fruit and vegetables and a smidge of olive oil which is optional so also suitable for WFPB oil free vegans. These two vegan salads are incredibly flavorsome, gluten free, dairy free and suitable for vegetarians as well as vegans and people who follow a plant based diet.

The first vegan salad is my favorite avocado and spinach salad thats very few ingredients and really easy to make quickly, with protein pasta green pea and baby tomatoes, cucumber, spinach leaves, dressed in balsamic vinegar and olive oil it is so delicious! very Mediterranean diet
The second vegan salad is the yummiest, its based on a chicken and feta cheese salad i use to make, but its so incredibly delicious, would be ideal to take to BBQ’s and for vegan packed lunch boxes. This is a rainbow plant based salad, so so nutritious but the best part is is so delicious, the tofu is pressed, and marinaded in a red tomato vegan pesto and airfried… this tastes incredible in this salad, with bell peppers, cherry tomatoes, spinach, cucumber, protein pasta red lentil fusilli from tesco… i highly recommend, sweetcorn, chili pepper, and dressed in olive oil which is optional and black pepper and pink salt. This plant based recipe would be ideal for meal prep and for vegan packed lunches, without withering ingredients it would make a great vegan lunch box recipe.
I have covered these plant based salads before in my what I eat in a day style videos, but I know many people will have missed these easy vegan salads in these videos as vegan lunch time recipes and because these two vegan salads really are so so good, i want to have all my best vegan salads in once series that is easy to find for people to go back to for the recipe.
