As previously stated in other videos, I am not vegan but I cook entirely plant-based at home making all my recipes vegan friendly (:
GARLIC TAHINI PASTA W GRILLED VEGGIES:
The sauce: saute on low heat 3-5 (or 10 lol) garlic cloves on low heat in ~1/4 cup of oil for about 10 minutes. After the garlic is brown (it should never get darker than a golden brown), add ~1/4 cup of tahini and mix until all combined. Season with pepper, red pepper flakes, and squeeze lemon juice to your preference. Thin out to your desired texture with plant based milk or pasta water.
The veggies: use whatever vegetables you like but highly recommend the balsamic mushrooms I made. On a lightly oiled pan, add dry slice mushrooms to your pan with no seasonings. Saute or griill on medium high heat until brown on one side. Flip mushroom slices and add salt and pepper. Then add balsamic glaze or a spash of balsamic vinegar (1-2 teaspoons) and simmer on medium-low heat until dark brown and cooked through.
Add pasta of your choice to the sauce and mix. Then add veggies , mix, and enjoy!
