// buckwheat pancakes – gluten-free //
makes ~7 pancakes with 1/3 cup scoop
180 grams buckwheat flour (1.5 cups)
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon pumpkin spice
1 Tablespoon ground flaxseed
1 ripe banana
1.5 cups water
1 Tablespoon apple cider vinegar (optional)
Let batter rest for 15 mins. Cook them on medium heat for ~2 mins or so on each side.

2 packs (400 grams) firm tofu
1/4 teaspoon turmeric
1/4 teaspoon paprika
black pepper ~ 10 grinds
2 Tablespoons nutritional yeast
1/2 Tablespoon miso
1/2 Tablespoon gochujang (or spicy pepper paste – optional)
1 Tablespoon tahini
1/2 cup oat milk
1/2 teaspoon kala namak (black salt)
pinch of asafoetida (hing)
